Made 4 quarts of salsa, 3 one gallon bags of freezer tomatoes, 11 quart jars of pickled okra. Planning to make a bit more pickled okra in smaller jars, freeze the squash and roast & dice the peppers. Then, to blanch & freeze the okra.

Wow, what an awesome gift! I’d make the tomatoes into sauce & salsa or make Caprese salad (tomato, mozzarella, basil, olive oil, salt & pepper). I think I’ll roast the peppers to make in instant dip/Bruschetta-like topping, pasta sauce & sandwich filling. Happy cooking!
Freeze the squash and okra. Can the tomatoes or can salsa. Peppers? Freeze? I’ll call later. I worked last night.
